What size bottle for kombucha

Sixteen ounces is one serving. Everything larger is a bet that you will finish it before it goes flat.

The short answer

Sixteen ounces for almost everyone. It is one serving, so a bottle gets opened once and finished, which is the whole game — carbonation starts leaving the moment a bottle is opened and never comes back. Larger bottles halve the bottling work and cost you fizz.

The arithmetic

A one-gallon batch is 128 oz. Roughly 10 percent is held back as starter tea for the next round, leaving about 115 oz to bottle.

Seven bottles is roughly twenty minutes of filling, capping and wiping. Three and a half is closer to ten. That is the entire practical case for going bigger, and it is a real one — bottling is the least enjoyable part of the whole process.

The trade-off that actually decides it

Carbonation is dissolved gas, and it is in equilibrium with the pressure above the liquid. Open a bottle and that pressure goes to atmospheric; the gas starts coming out of solution and does not go back in. Reclosing the swing top slows the loss. It does not reverse it.

So a 32 oz bottle opened on Monday is noticeably flatter on Tuesday and largely flat by Wednesday. If your household drinks a quart at a sitting, that is irrelevant. If one person is having a glass with dinner, a 16 oz bottle finished in one go tastes better than the second half of a quart.

The pressure point about size

Size interacts with the pressure question in a way that is easy to miss. EZ Cap publishes a 100 PSI rating for its 16 oz amber bottle. It does not publish one for the 32 oz in the same line, and we do not carry the figure across — a larger bottle presents more glass area at the same internal pressure, and the maker chose not to make the claim.

Fridge space, which decides more than people admit

Seven 16 oz bottles need a shelf. Two-thirds of a gallon in liter bottles needs a different shelf, and a liter bottle at 12.13 in tall — Bormioli Rocco publishes that figure, along with its 3.5 in diameter — will not stand upright in many fridge doors.

This is one of very few categories where dimensions are genuinely published. IKEA gives the KORKEN as 29 cm tall and 9 cm in diameter. Measure the shelf before you order twelve bottles; it is a five-minute check that avoids a returns problem.

A mixed set is usually right

  • Mostly 16 oz, for everyday drinking and for the conditioning stage.
  • A couple of 32 oz or liter bottles, for a batch you want to keep in the fridge without filling seven bottles.
  • One food-grade PET plastic bottle every batch, as the pressure tester. Not for serving.
  • One clear bottle, if you have made something with a color worth showing.
