Kombucha sits at pH 2.5 to 3.5 continuously. The tap is the only part of the vessel that is not glass, and it is the part with a material question attached.
Safe: 304-grade stainless steel or better, professional-grade hard plastic, and wood. Unsafe: brass, consumer-grade translucent white plastic, semi-hard plastic with a metallic coating, and any spigot assembled with adhesives or epoxies. If the material is not published, treat it as unknown and do not buy it.
Why a tap is a materials question at all
A vessel of kombucha is a mildly acidic solution held at room temperature for weeks or, in a continuous brew, months. Glass does not care. Ceramic with a food-safe glaze does not care. A metal tap does care, because acids are precisely what dissolves metals, slowly and invisibly, and the products end up in the drink.
There is no dramatic failure to watch for. Nothing corrodes visibly, nothing tastes obviously wrong. This is why the decision has to be made on paper before you buy rather than by observation afterwards.
The safe list
Stainless steel, 304 grade or better. The default answer. Kombucha Kamp names 304 as the minimum, and 316 is better still. This is the same family of alloys commercial breweries are built from.
Professional-grade hard plastic. Kombucha Kamp names hard, not translucent-white, professional-grade plastic as acceptable, and describes the PP5 polypropylene on its own porcelain brewer as "the highest quality plastic designed to be corrosion resistant". The distinction is between a named, specified polymer and an unlabeled one.
Wood. Traditional, listed as safe, and rare in modern vessels.

Brass is the trap because it is genuinely common and genuinely safe elsewhere. Kombucha Kamp warns specifically about barrel suppliers offering metal spigots "made of brass, which is safe with higher pH beverages like beer, but not safe with the low pH of Kombucha". A tap sold in a homebrew shop is not automatically a kombucha tap.
How to check a tap you already own
Find the listing or the manual and look for a grade, not just a family name. '304 stainless' is a specification; 'stainless steel' is a category.
A magnet is a weak signal, not a test. Austenitic 304 is usually only faintly magnetic, but so are several other things, and cold working changes it. Do not buy on a magnet.
Yellow or gold-toned metal on a homebrew fitting is very often brass. Assume so until the maker says otherwise.
Take it apart. If it will not disassemble without tools or force, it also cannot be cleaned properly, which is a separate disqualifier.

Cleaning is half the safety question
Kombucha throws long yeast strands, and they collect in the narrow bore of a tap where nothing reaches them. Kombucha Kamp lists "quickly and easily removed for cleaning" as a critical requirement, alongside the material list.
In practice: take the tap apart every time you clean the vessel, lay the parts out in order on a towel so they go back the same way, run a small bottle brush through the bore, and rinse thoroughly. Avoid soaking gaskets in anything harsh — a perished gasket is a leak, and the same is true on bottles.

A named professional-grade hard plastic can be. Kombucha Kamp lists professional-grade plastic as safe and describes PP5 polypropylene as corrosion resistant, while warning specifically against consumer-grade translucent white plastic and semi-hard plastic with a metallic coating.
Why is brass unsafe for kombucha but fine for beer?+
Because of pH. Beer sits far higher on the pH scale than kombucha, and brass tolerates it. Kombucha at pH 2.5 to 3.5 is aggressive enough that Kombucha Kamp names brass spigots as not safe, particularly on oak barrels where they are common fittings.
How can I tell what grade a stainless spigot is?+
Only from the maker's published specification. A magnet is not a reliable test — austenitic 304 is usually only faintly magnetic, but so are other alloys, and working the metal changes its response. If a grade is not published, treat the material as unknown.
Do I need to take the spigot apart to clean it?+
