You can, if it is genuinely food-grade plastic — but you should not choose to. Plastic scratches, scratches harbor residue that no amount of scrubbing removes, and glass costs about the same. The one case where plastic is genuinely useful is a short second fermentation, where a PET bottle's firmness tells you the pressure is up.

Glass is chemically inert at these pH levels, non-porous so nothing lodges in the surface, and transparent. That last point is underrated: you can see the pellicle form, watch the yeast strands, notice the liquid level, and — most usefully — spot something growing on the surface on day three rather than day ten. Telling mold from a SCOBY is very much easier when you have been watching the surface all week.
The costs are real but small: glass is heavy, and a two-gallon jar full of kombucha is roughly seventeen pounds of liquid inside a breakable container. Neither is a reason to use something else.
Ceramic, and the lead question
Ceramic has been the fermentation vessel for centuries and it is genuinely good: opaque, so light never reaches the culture, and heavy enough to be thermally stable. Kombucha Kamp recommends food-grade ceramic, stoneware or porcelain at 2 to 5 gallons for continuous brewing.
The caveat is glaze. Decorative ceramics can contain lead in the glaze, and a decorative crock is not a food vessel however handsome it is. Kombucha Kamp's guidance is that food-safe items use lead-free glazes, and that home lead test kits can confirm whether a particular vessel is safe. Its own porcelain brewer is published as certified lead-free. If a piece does not state that it is food-safe, do not use it for a ferment that will sit in it for months. Glass versus ceramic compares them properly.
Plastic, honestly
The reason plastic keeps coming up is that food-grade plastic fermenters are cheap, light and unbreakable, and homebrewers use them for beer constantly. For kombucha the objection is not chemistry, it is surface.
Plastic scratches. Every stir, every scrub, every scoop leaves micro-abrasions, and those are exactly where residue and organisms sit out of reach of a cloth. In a beer fermenter that gets a full sanitizing cycle between batches, that is manageable. In a kombucha vessel that hosts a living culture continuously and gets rinsed rather than sanitized, it is a genuine hygiene problem accumulating over months.
There is also the ordinary caution about acid and polymers over long contact. That concern is much weaker than the internet suggests for genuinely food-grade material — but "genuinely food-grade" is doing a lot of work in that sentence, and an unlabeled bucket does not qualify.

Stainless steel at 304 or 316 grade is non-corrosive at kombucha's pH and is the professional standard — commercial kombucha is made in stainless tanks. At home the objection is only that you cannot see in, and that the vessels are expensive.
Everything else metal is out. Aluminum, copper, cast iron and unlabeled alloys all react with acid. Brief contact with a stainless spoon is fine; a batch sitting in an unknown metal for two weeks is not. Spigot safety covers the same question for taps, where it comes up most.

Can you brew kombucha in a plastic container?+
In genuinely food-grade plastic, yes. But glass is better and costs about the same: plastic scratches, and micro-abrasions hold residue that rinsing does not remove, which matters in a vessel that hosts a living culture for months.
Is ceramic safe for brewing kombucha?+
