The mechanism that keeps it safe
Kombucha, jun, water kefir and tepache all work the same way: fermentation drops the pH, and a sufficiently acidic environment is genuinely hostile to most of the organisms you do not want. That is not a folk belief, it is the reason these drinks have been made safely for a very long time.
The corollary is that the risk lives entirely in the window before the acidity arrives. A fresh batch of sweet tea is near-neutral and hospitable; a batch below pH 4.2 is not. Everything on the list below is about shortening that window.

What is mostly folklore
"Never let metal touch kombucha." Overstated. Commercial kombucha is made in 304 stainless tanks. Brief contact with a stainless spoon is fine. What matters is prolonged contact with an unknown metal, and brass specifically. Spigot safety.
"You must sanitize everything like beer." No. Beer wort has no defenses; kombucha has acidity. Clean is the standard, and chemical residue is a real risk that over-sanitizing introduces.
"A sinking SCOBY means it is dead." No. Buoyancy depends on trapped gas and varies constantly.
"Brown stringy bits mean contamination." No. That is yeast, and it is what an active culture looks like.
The genuine cautions
Mold means discard everything. The batch and the culture, with no trimming and no keeping the liquid. Mold versus SCOBY.
Bottle pressure is real. A second fermentation is a sealed pressure vessel. Use bottles built for carbonation, leave headroom, burp them, and refrigerate once fizzy.
Lead in decorative ceramic glaze. A handsome crock with no food-safe statement is not a fermentation vessel. Home lead test kits settle it.
Brass and unlabeled metals at pH 3. Kombucha Kamp is explicit that brass is safe with higher-pH beverages like beer and not with kombucha.
All ferments produce some alcohol. Homebrew is untested and the level is unknown. Kombucha alcohol content.

How do I know my kombucha is safe to drink?+
Check that the pH dropped below about 4.2 within the first few days, that nothing fuzzy is growing on the surface, and that it smells sour rather than putrid. If something looks wrong and you cannot resolve it confidently, discard the batch.
Do I need to sterilize everything?+
No. Kombucha is not beer: it starts with acidic starter tea rather than a defenseless sweet wort. Hot water and plain unscented soap, rinsed thoroughly, is the standard, and chemical residue is a more realistic risk than insufficient sanitizing.
Is it dangerous to let metal touch kombucha?+
