Kombucha alcohol content

Fermentation produces alcohol. The honest position on how much is in a jar in your kitchen is that nobody has measured it.

The short answer

Kombucha contains some alcohol — fermentation cannot happen without producing it. Commercially sold non-alcoholic kombucha in the US must stay below 0.5 percent ABV. Homebrewed kombucha is not tested, so its level is genuinely unknown, and a long warm ferment or a hard second fermentation raises it.

Why there is any at all

A kombucha culture is a partnership. The yeasts convert sugar into alcohol and carbon dioxide; the acetic acid bacteria then convert much of that alcohol into acid. That second step is what makes kombucha sour rather than alcoholic, and it is also why the alcohol level stays low in a well-behaved batch.

But it is a process, not a switch. At any moment there is alcohol in the jar that the bacteria have not yet converted, and anything that favors the yeasts over the bacteria leaves more of it.

The 0.5 percent threshold

In the US, a beverage sold as non-alcoholic must contain less than 0.5 percent alcohol by volume. Commercial kombucha producers test and formulate to stay under that line, and products that exceed it are sold as alcoholic beverages under different rules.

That threshold applies to what is sold, not to what you make. A homebrewed batch is not tested and there is no way for a home brewer to measure it meaningfully — which is the honest answer to how much is in your jar: nobody knows.

The pattern is consistent: sealed, sugary and warm favors the yeast; open, long and cooler favors the bacteria. A hard second fermentation is exactly the conditions that produce the most alcohol, which is worth knowing rather than worrying about.

Why you cannot measure it at home

A hydrometer, the usual homebrew instrument, works by measuring the density of a liquid before and after fermentation and inferring alcohol from the change in sugar. That calculation assumes sugar goes to alcohol and nothing else.

In kombucha it does not: a substantial part of the sugar becomes acid, and acid changes density too. The hydrometer reading therefore does not mean what the beer formula says it means. Measuring alcohol here needs laboratory analysis, which is precisely why this page recommends no instrument — a tool that cannot answer the question is not a tool.

  • If alcohol matters in your household for any reason, treat homebrewed kombucha as containing some. That is the honest position and it is the safe one.
  • If you want to minimize it: a longer open first fermentation, a shorter second ferment, less fruit at bottling, and refrigerate promptly.
  • Commercial non-alcoholic kombucha is tested to stay below 0.5 percent ABV. Homebrewed is not.
  • There is no home instrument that will give you a number you can rely on.
